Hello,
I have been in a production of fight scene for quiet a some time now
but I don't know where to situate the fight?
On a rooftop? Where?

A bridge? try somewhere inclosed with lots of props, like in a warehouse, or livingroom. 
A shopping centre. Think of all the things they could grab from the shelves and throw at each other!
yeah! and they could throw each other into the glass panes of store if it started in a hallway!
well, I would say on a highway, but I want to do that one time (like that matrix scene), when my FX is good enough for it.
Set it in a demon-possessed library.

A library like jargon said. Because of bookshelfs, a couple floors a desk computers etc. but I think you should take out the demon possesed part.
A shopping centre. Think of all the things they could grab from the shelves and throw at each other!
thats a really good idea considering all the props, but if you dont know how to make a detailed set like that maybe make it on a rooftop where the person could dramatically fall off at the end when he loses. ( the fight ):|
I'd say in a house or down an alley.

I agree with Hazzat. But make it start in a shopping center, then one gets thrown into a DVD store (or something).

In a Plane. Then one tries to grab a parachute and run away but the other one tackles him and they fly out of the plane with one parachute and they are fighting and falling at the same time, then the parachute opens and one holds on while the other's hand slips and he falls to his death.
