I like the Olympic idea in general and not a specific sport.

The problem with "Olympic" in general is that it might be quite hard to compare the animation of a guy running and a guy throwing something. Everyone will animate a different motion.
I think it's better to choose one particular sport.

I dont have a 'fencing sword' would the ones dastan used in prince of persia or the ones jack sparrow used in POTC be better?

Well, this would definitely be a challenge. Minifigures are really not suited for being in a fencing stance, and the even in a sad fencing stance it would be ridiculously difficult to make advance or retreat. How is one going to pull off a lunge?
