I would still like to see "shooting a bow or crossbow."
I suppose I should just win and let that be the new theme 
Keeping in mind that it's an animation, I'd suggest climbing a tree. Simple in concept, challenging to pull off, and purely an animation challenge.
How about just Climbing?
Already been done. Climbing a tree would be a completely different animation technique anyway, in theory.

I'd suggest summoning a magic beast. That could look awesome.

Loved it! Very good, great masking, but very short.
The animation challenge is flipping a coin. It is a simple and short action, so it is unnecessary for it it to be longer.
I think it needed more easing, particularly the arm motion, which just stopped extremely suddenly.
The hand of the minifigure jerked in an unnatural way just after the coin left it, and I think the splash might have been a tad bit exaggerated...
Fishing sounds cool
Nice, simple, and you can change it around to the way you want your minifigure to fish, so it has your name written all over it...
What about doing a backflip/frontflip? That way we can add all different reasons for doing this action...
