The cloth greenscreens are probably your best bet, but the foldable ones are pretty nice too. I don't usually key much though, I mainly use a greenscreen as a reference for masking. But I totally recommend the TubeTape greenscreens. They work great!
Right now I use a green 36" x 24" piece of foam core. It doesn't reflect onto the set / minifigs. It's not all about the screen though, it's also what software you use and how well you can chroma key and use spill suppression.
Where does one acquire foam like this, in the proper color?
