So, I've seen brickfilms with walking and full-out sprinting, but is it possible to make a minifig jog?
If so, how?

I think you should make him ''hop'' every right step or something. This can be done with masking, alot of masking
Depends on what framerate you're filming at. If it's 15fps, then add 3 extra frames.
Here is something I made a while ago showing a slower method to animate running which I think looks something like jogging. If you want it even slower, just add another frame between 2 and 3.
You know, Nick, that's a pretty good idea for jogging. I might use that in upcoming films.
