Building a house might be interesting, wouldn't involve a minfig much but would involve cranes and would rely a lot on smoothness. Climbing a ladder, space fight/battle (might rely too much on masking tho), transforming car (mayhaps transforming into a robot, mayhaps huge rocket engines folding out, etc.).
Seems a tad bit too similar to the freerunning challenge, IMO. But it's your call.
Helmet, windscreen, cam... A pilots view of what is happening.
First person doesn't rely very much on animation, just camera angles and whatnot.

Also, climbing a tree, going to the bathroom, shower/bath, pogo sticks, mob animation.
And, jumping over a fence, theater (minifig must be an actor), brushing teeth/washing face, making bed, mining, baseball, hunting.
Need I post this again?
Also, a regular foot chase, scrubbing, baking, writing, painting, getting shot, slipping.
I think Juggernaut Pictures' ideas are great. Pick something out of those.
