I've seen so many topics on Mac this mac that.
Weather its a camera choice or software look here.
The Quickcam Pro 9000 Is not compatible with Mac

An old but widely used webcam for stopmotion is the quickcam 4000 everything the 9000 is except quality (becase its quite old).
As for software there is no MonkeyJam but there is \IstopMotion a program which is widely used for professionals and home users. They have a wide variety of options which are compatible with almost every camera.
If money is an issue visit the free software list and scroll to the Mac section.
A better quality alternative to the Quickcam 4000 and stil compatible with nearly every frame capture program are Video Cameras.

Software
Editing on the Mac is great not to sound bias in here or favor an OS but there are equivalents to WMM (Windows Movie Maker) and Vegas.
Every Mac is preinstalled with Ilife wich includes Imovie a good starter for editing your videos and its free.
Not to harcore but enough to get one started.
Deeper editing can be found in Final Cut Express and Studio.
Also all adobe products are compatible with Mac.
