Both.

Video with your voice in background, then pictures if you need closeups/ other things video cannot show.

What kind of tutorials are these? Animation?

Brickfilming in general. Lighting, pre-production, animation, etc.
That kind of stuff has been done time and again by about every second person who has called themself a brickfilmer. Unless it's something no-one else has already done to death (like taping paper over lights and walk cycles) it wouldn't be anything new. Do a quick search on youtube, you'll literally find hundreds of tutorials.
