In the film I'm working on I want to have everything black and white, but in the end of it I want to have one part of the picture be in color at first, then everything else fades into color. How can I accomplish something like this?
One layer without the object is taken in black and white, and the other layer with the object is taken in color. Then you mix the two layers. I've never done it myself, though.
Take the picture with black and white, than with color.
Apply a transition. 
One part of the picture in colour would be like in Sin City. Here is a test I did a few weeks ago:

It's simple. Just use 2 layers. Layer 1 the original pic in colour. Layer 2 is the same pic, but in black and white. Layer 1 is located under layer 2. Now cut the parts out of layer 2, you want to have in colour.

If you're using the QKP9000, it's quite easy, and you can do it all in camera. Go to the settings and underneath where you adjust the focus, brightness, and contrast, there's a slider called Color Intensity. All you have to do it slide it back towards the left however far you want it to go. (The farther left you slide it, the less color and the more black and white.)
I think he means a Sin City effect.

That won't let some objects stand out in terms of colour. All you're doing is desaturating all of it, not parts of it.
Oops, I thought because of the title of the thread that he wanted just some color, except a kind of faded-ish, black and white-ish look.
Although I might add, it makes some colors look more desaturated than others. The brighter colors stand out more than the dull colors.
You could chroma-key the colored object into a black and white background.
