What you need to do is to set the camera on manual because every time something changes in shot. Such as your hand bending down to move a minifig it changes the colours in shot. The camera constantly wants to amend these changes and will continue to white balance. Try find if you can set it on manual you may find that some white balancing on cameras allow a manual white balancing if you look for it. It's not always easy to find but have a look to see if you can choose the white balancing yourself.
How many light sources are you using?
ive heard that you should put your settings on something called 'freeze'. is that correct (i got that from a brickfilms tutorial)
