I recommend checking out the Mac section of the FSL.
Commercial software wise, the stuff that's been mentioned is pretty good.

Actual hardware wise, remember, if you care about such things, the 20" iMacs have inferior screens to the 24" (TNs - nasty) and the new Macbooks and Macbook Pro's are glossy and are not colour accurate, even when callibrated.
