I just bought a t3i and I love it. I would get the t3i over the t3. The reason is that the t3i takes good video and the t3 does not. I think think adding the ability to have a good video camera is worth the extra money.
T3. The T3i isn't too much better, like what was already said. Also, the T3 is cheaper. 1 question: Have you checked out the T2i. I don't have a dslr, but I know that there are several brickfilmers who use the T2i. Just a suggestion.

The T2i and the T3i are almost identical. The T3i is simply a fix of the T2i which has a tendency to overheat when shooting video continuously over a long period of time, it's not worth the extra $50 unless you really want the flip out screen (which although convenient at times is not necessary) or if you are going to be using the camera primarily for live action video. :)

For brickfilming you're fine with just the T3, I've seen an incredibly professional award winning stop motion film on level with Laika and Aardman shot on the t3. If you're planning on doing photography and/or live action as well, then definitely the T3i. I know it seems weird, but if you are only using it for brickfilming then you need not spend more money than on the T3. I have plenty of reasons, but not enough time to explain them. :)
