First, an illustration I find to help people deal with layers is to think of it sort like a stack of clear tracing paper. Every layer in gimp is sort of like a sheet of that transparent tracing paper. You can see through all of them except when one has stuff drawn on it, then it hides what is lower in the stack. You can take a "sheet" (click it in gimps layer selector), draw on it, transform it, whatever it, etc. Whatever is higher in gimps layer box is simply going to hide what is lower if it has something drawn on it. I don't know if that helped, but maybe it did. :)

As for what you are having trouble with, I am not sure I get you. What do you mean by "trying to make a piece of text using a logo"? If you mean that you have an image, and another "logo" image with the logo you want to go onto the first image, then it is really easy. 
Simply open your first image. Then "open as layers" (in gimps File menu, even easier is to drag your logo into gimps main window from its folder. Gimp will create a new layer for it automatically.) your logo. All you have to do now is make the background of your logo transparent and place it wherever you want on your base image (you may have to crop, scale, rotate, etc to get it where you want). A simple way of turning the background of your logo transparent is to select the background and erase it. There are many ways to do that. If the background is a regular colour, using the "Fuzzy select" (icon looks like a magic wand) selection tool may be the best idea. If the background isn't uniformly coloured, you may have to manually outline the logo with the "Free select" (icon looks like a lasso) tool. 

Tip: If you you try to erase part of a layer and it simply turns white, it means that layer has no "alpha" channel. Go to "Layer > Transparency > Add alpha channel". Now when you erase, it should go "invisible" and show whatever is below.

Tip 2: To instantly erase an entire selection, hit "Delete" on your keyboard. Saves time.

Just ask if you have any more questions. I didn't address paths because I felt this was getting kind of long, and honestly, I doubt you really need to be using them if you are trying to. 			<description><![CDATA[I've been having quite a bit of trouble with GIMP lately.  

I'm trying to make a piece of text using a logo, remove all the background so it's just text, and transplant it onto an image.  Sadly, my expertise in photo-editing is far from the greatest, and I'm completely stumped.  What really throws me is the fact that the logo is treated as a separate image.  Also, I find the whole concept of "layers" and "paths" quite confusing.  Does anyone have any helpful advice?]]></description>
