Good news.

I tested out some recording with Jing yesterday, and the newest version yields better results then the older one.
There will be lag, but nothing that will make the video unwatchable. I will be recording the first episode tomorrow, and getting it up some time relatively soon after that.

Thanks for being so patient!

Hmmm... It would be nice to have brickfilm-specific tutorials for Blender, but I would be wary on this topic. Like the great Blender Artist Andrew Price said, you can't become dependent on tutorials; otherwise you won't be able to think or problem solve for yourself down the line. If you want to know how to animate Legos in blender, look up armature tutorials and apply that knowledge that you learned to brickfilming.

I guess what I'm trying to say is: don't watch tutorials to learn the process, watch tutorials to learn the techniques.

With this in mind, there are many great websites out there that contain blender tutorials (in order that I have found most helpful):
Blender Guru
Blender Diplom
CG Cookie
Blender Artisits
CG Tutorials
Blender Cycles.com

I hope this helps!
